Dessert time ft. Almond Bark Tofutti and my sister’s chocolate mud cake, made from packet mix bought at The Green Edge.
Fluffy Vanilla Pancakes
Possibly the best pancakes I have ever made!
(Makes 6 medium size)
1 1/4 cups plain flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups soy milk
1 tsp vanilla essence
1 tsp canola oil
- Mix flour, sugar, salt and baking powder with a whisk. (I don’t have a sift so I just do this!)
- Make a small well in the dry ingredients and add the soy milk, vanilla essence and oil. Mix with whisk until combined (no lumps). Don’t over mix though.
- Cook one or two at a time in a large fry pan, in melted nuttelex.
- Serve with vanilla So Good ice cream, raspberries and maple syrup.

I just popped over to The Green Edge to get some more delicious sausages - will be having them with garlic mash and wilted spinach tonight - and some more henna dye (it is $20 but so much easier to use as it is in a liquid form and actually smells really nice).
I also got given a free sample of CocoLuscious’ new Christmas flavour ice cream - rum, coconut and chocolate chip! It was soooo yummy. Apparently they aren’t making it on chocolate ice cream but I think they should! I’m not usually a huge fan of CocoLuscious but this was really tasty.

These are the easiest crepes ever, courtesy of my sister.
2 tsp Orgran ‘No Egg’ (mix with 2 tsp water)
4 cups flour
1 cup rice milk

It is my birthday on thursday so I thought I might as well splurge on some specialty vegan goodies this week! I have also ordered a chocolate mousse cheesecake. Mmmm.
If you haven’t tried this particular flavour of tofutti you HAVE TO, it is incredibly INCREDIBLY delicious. I bought the three chocolate bars for me and my sister to taste test. They are vegan versions of Bounty bars, Peanut Butter Cups and choc covered Nougat. I am sending the sour worms to a different sister, the agave syrup is for cooking, specifically chocolate mousse (there’s a recipe on here under The Hungry Vegan) and Lamyongs Soy Nuggets are the only fake meat that I use (in stirfries mostly).

Both of these are delicious. I recently tried the vanilla for the first time and was blown away. It tastes virtually the same as regular vanilla ice cream. Pretty much all Coles and Woolworths stock them, so they are a convenient option if you don’t have access to specialty vegan foods. Apparently there used to be a chai flavoured one too!
