It is currently too hot to eat much in Brisbane, so tonight I made this delicious and fun salad! It is fun because you get to squish it all together with your hands and fingers.
It has kale, avocado, red onion, chickpeas, tomato, lemon juice, olive oil and salt & pepper. The recipe is from the Animals Australia recipe site, whyveg.com, and you can read it here! I added the chickpeas and red onion to it to make it a bit more filling.
I only used one avocado but I would definitely use two next time to make it even more scrumptious.
